Purple potatoes are different from your everyday regular potatoes. This cool starchy vegetable comes from South America. While they look dark on the outside, they have a deep purple color on the inside.
Purple potatoes have several benefits to our health. They are high in antioxidants, fiber, vitamin C, and selenium, among others.
Also, unlike white and yellow potatoes, purple potatoes have a lower glycemic index which means they raise your blood sugar slower than other foods.
Next time you roast potatoes, try to include some purple potatoes too.
Add them together with yellow potatoes, olive oil, lemon, garlic, mustard, paprika, salt & pepper, and enjoy!
